I hope your wine turns out well. I made some last spring, and it was definitely worth it.

The leaves can be made less bitter by soaking them in water, which extracts the bitter-tasting taraxinic acid. John Kallas has a nice article in Backwoods Home Magazine describing the process, which was the starting point for a slightly more science-ey (and more silly) blog post I wrote ( The flowers can also be used to make a jelly--which has a similar taste to the wine, minus the alcohol--or put into brownies. :-)

I thought for sure I was going to be reading about Scout's Honor in Waitsfield. You may want to add a note if they aren't related in any way. And I'm pretty sure they use grass-fed local dairy as well. Kudos on trying something out of the box, Scout & Co.! I have to try the Oak/Dill combo!

It's unfortunate that they infringed and copied a well-known name for their ice cream. They shouldn't have used the name "Scout." There's a much better ice cream in VT - Scout's Honor Creamery in Waitsfield and Warren.
