IT’S A WRAP

The basic rules of successful street food are that it must be quick to prepare, easy to eat without much fuss, and tasty enough to stand out from the crowd. The Skinny Pancake cart, which hangs out on lower Church Street in Burlington, has it all.

Using special tools they call the “whirligig” and “saber,” young crêpe-meisters spread batter onto a hot griddle, flip it, smother it with mostly local ingredients, and fold it up for forkless noshing. Flavors include the “lumberjack,” with ham, cheddar and optional apples, and the sweet “lovemaker,” a Nutella-and-strawberry concoction topped with whipped cream.

Want to sit down? The cart’s owners also have a café on the Burlington Waterfront, offering even more fantastic flapjack flavors, local microbrews and regular live music.
