First, there is no evidence that the Rebel name was based on Ethan Allen and others of that era. If it were, then why did they get rid of the mascot? Without the mascot it isn't clear, and it is therefore just as valid to associate rebel with the south.
Second, for those who are so annoyed by others' feelings, you clearly have strong feelings on the subject. So only your feelings matter?
Third, to hold up the budget because of the name change is, frankly, petty.

Great breakfast
I've never had any of the breakfast offerings before so I wasn't sure what to expect. I got the spinach-mushroom-red onion omelet, which came with some fried potatoes and salsa. I had seen another customer's order and was certain I wouldn't be able to eat the large portion. I was wrong! The omelet was most excellent - the green sauce was subtle yet went perfectly with the other ingredients. The spinach, mushrooms & red onions were not overcooked, and all flavors came through. The potatoes were not oily and had enough of a flavoring to not be boring potatoes. Before I knew it, I had eaten the whole thing. I've never had such a breakfast where, as JT said, the flavors complimented each other so well. I left quite happy. Please note that nothing I had was "hot" - this was not TexMex with cayenne in everything. I look forward to visiting Fireside Cafe again! Food: 4 Ambiance: 3 Service: 4
