Hey David,

Im a brewer in Burlington and can give some insight into how we use our local ingredient. City water enters our building and passes through a two tank charcoal filtration system on its way to our hot water tanks which heat it up to about 75 degrees Celsius. Later during the actual wort manufacturing, the water is then boiled for 90 minutes which serves as a effective way of sterilizing the product. Not only does boiling the water kill microbes, it is also very effective at destroying other chemical compounds that may reside in the water supply.
In addition to this standard procedure, we also employ a microbiologist who does lab analysis of the water and who maintains an open dialogue with the city about the its quality.
