Caledonia Spirits — Caledonia Spirits was founded to highlight the critical and threatened role of bees as agricultural pollinators by popularizing honey-based beverages. A decade and tons of regional honey later, the company’s much-lauded, honeyed Barr Hill gin, barrel-aged Tom Cat gin and vodka have powered the distillery’s recent expansion from its original Hardwick location to Montpelier. The industrial-chic building hosts a roomful of glowing copper and stainless distilling equipment, a retail store, and a large bar with a riverside patio. The menu of classic and innovative cocktails might include a frothy-topped Ramos Gin Fizz or a rosy-hued, bittersweet creation garnished with local strawberries called the Hiking Club. Guided tours explain the company’s mission and history and offer behind-the-scenes peeks through large windows. It’s the Ben & Jerry’s tour of adult beverages.
