There are some remnants of the bubble here in Southern Vermont. This may explain why I am so frustrated about not being able to protest to anybody; most Vermonters are still bubble-wrapped. This is evident as, the lower half of the Union is totally bubble-warped.

The best nearby bet for brains is Canada.
Almost unknown in the US is spleen, Sicilians put it in a sandwich with cheese called Vesteddi. My mother made a German version where the whole spleen was filled with a bread stuffing that was cooked for hours.
In China it is served with tripe as a Dim Sum dish.
