Starting on the same weekend as the Vermont Maple Festival, two of the town's restaurants are making strong impressions with $25, three-course Vermont Restaurant Week dinners.
One Federal starts its meal with a choice of maple-parsnip soup or green salad. Get the latter with house maple-balsamic dressing, and either way you'll be enjoying sap from the chef's own trees. You can continue on the theme with a maple-brined pork chop, or go for butternut squash ravioli or a seafood boat.
Cosmic Bakery showcases sandwiches and mini cupcakes at lunch for $10. Don't miss the white-chocolate-rose or honey-lavender delicacies. But dinnertime brings something far more refined, including suggested pairings of both beer and wine.
Start with the spicy Thai duck wings, then move on to rack of lamb or vegan tofu scallops. There are two maple-licious dessert choices: Cheesecake with gluten-free nut crust or vegan crème brûlée.
