Stuck in Vermont: Erinn Simon & That Cake Stand

Erinn Simon has graduated from crocheting cupcakes to baking them. Back in 2010 we featured our friend Erinn and her Urban Farmgirl crafted creations. Almost ten years later, she is still known as the "Lunch Lady" at Burlington Children's Space and her family has grown to five with the addition of her daughter Sadie Lou.

For the past year, Erinn has been constructing colorful, creative cakes through her new venture, That Cake Stand. And thanks to her husband Sam Simon, a professional photographer, she shares glamorous photos of her cakes on Instagram and Facebook with her thousands of followers. The couple also teamed up with their kids to create a series of videos about healthy eating called "Kid Made."

Eva visited Erinn and her family at their busy Burlington home to get in the Valentine's Day spirit with a heart-covered, striped confection.
