Update December 11, 2025: Unfortunately, early snow, subzero temperatures and slow business prevented Kate’s Food Truck from staying open as co-owner Jon Villeneuve had planned. The truck will reopen sometime in March depending on weather.

Kate’s Food Truck, at 261 Route 15 in Jericho, will stay open through this winter for the first time in its five-year history, according to co-owner Jon Villeneuve. The menu will build on the takeout meals the truck offered toward the end of last season, when it closed in December, he said.

Starting in November, Villeneuve and his wife and co-owner, Kate Corbett, will offer expanded options for takeout and for curbside pickup, so customers won’t even have to leave their cars. Meals might include country-fried steak with sausage gravy; fish and chips; grilled flank steak with vegetables and mashed potatoes; and balsamic-marinated salmon over rice with garlic butter edamame.

Villeneuve, 45, said affordably priced family meals will also be on the menu, such as mac and cheese or lasagna for four with salad and rolls.

Through November 2, as supplies allow, the truck is offering its seasonal special Thanksgiving fries, which are well worth a visit. Villeneuve said he and Corbett have offered regular and gluten-free versions of the fries ($15.89/$19.46), loaded with house-smoked turkey, freshly made cranberry sauce, stuffing and gravy, through the month of October since they opened.

The kitchen team prepares the stuffing with fresh celery, onion and housemade turkey stock. The hand-cut fries are tossed with garlic-and-herb seasoning. Villeneuve said that on a busy day, he goes through four whole turkeys, plus three breasts, to make the Thanksgiving fries and a Thanksgiving sandwich.

To bridge the seasonal shift, Villeneuve has also created a line of milkshakes, such as Caramel Apple Pie, featuring real pie pieces; and Bourbon Whiskey, with or without a splash of Vermont Bourbon Maple Cream Liqueur from Jeffersonville’s Smugglers’ Notch Distillery. He said he’s also dreaming up eggnog and pumpkin spice shakes.
