Devotees of the tiny Four Corners of the Earth on Pine Street in Burlington have long raved about owner Ladislav Pancisin’s exotic luncheon sandwich offerings, each of which has an ethnic twist: Think Jamaican avocado, Japanese tuna and Cuban pork.

Recently, Pancisin turned his eye toward dinner, as well. Staffer and “sandwich engineer” Joe Perella says, “The dinners are similar to the sandwich menu, as far as being from all over the globe. They change nightly. We usually do a vegetarian entrée and a meat entrée.”

Since beginning dinner service in January, Four Corners has dished up everything from Hungarian chicken paprikash to racks of lamb with spiced sauerkraut and mashed potatoes.

Given that winter is traditionally slow for restaurants, it may seem odd to start serving more meals rather than fewer. But Perella says the restaurant has a solid crew that can handle staying open later. And it’s something Pancisin has always wanted to do.

Four Corners offers dinner between 6 and 8 p.m., seven days a week. Perella strongly suggests that customers call in advance, whether they want to eat in or take out. “Everything is made to order,” he explains. “If you let us know you’re coming, we’ll have it ready for you so you don’t have to sit here for half an hour or 40 minutes.”
