At the Soda Plant in Burlington, ZAFA Wines and Shacksbury are three weeks into the soft launch of their collaborative cellar and tasting room, CO Cellars.

“It’s a space for collaboration, community, cofermentation,” ZAFA owner Krista Scruggs told Seven Days earlier this week. Since the space is an active fermentory, visitors can watch in-process wines bubbling in demijohns or learn about winemaking as the vintners riddle, disgorge and bottle beverages. The tasting bar is open for full pours of Shacksbury ciders and ZAFA’s grape and mixed-fruit wines, along with collaborative ferments blending juice and know-how from both companies.

Scruggs said the food program is still in development; for now, there are Utz potato chips, Twig Farm cheeses, and a plan to partner with local chefs for pop-up and pairing dinners. Meals with Pizzeria Ida chefs Dan Pizzutillo and Erika Strand and Dedalus Wine Shop, Market & Wine Bar‘s Michael Judy are already in the works. The tasting room and bottle shop are open Thursday through Saturday evenings, with hours expanding to six days a week in late January.
