Siblings Amaya and Wolf Baustert plan to open Clover Café at 510 Shelburne Road in December. Initially, the South Burlington coffee shop will offer espresso drinks made with Burlington’s Brio Coffeeworks beans, fruit smoothies, protein shakes, and sweet and savory pastries from local bakeries, some of them baked fresh at the café.

The pair grew up frequenting Stowe and Essex coffee shops with their father and are “huge coffee fanatics,” Amaya, 27, said. “I always loved the idea of working in the coffee business.”

Clover Café may add sandwiches and bagels in the future, Amaya said, but for now she expects to source baked goods from Sweet Alchemy in Fairfax, Klinger’s Bread in South Burlington, and Belleville Bakery & Catering in Burlington.

The Bausterts considered several locations for their café before landing on the new building near Farrell Street, which includes apartments and offices. “I love the location and the big, bright windows,” Amaya said. “Everyone can see it from the road, and it has good exposure to traffic.”

Amaya said she named the café for her affinity to four-leaf clovers. “I find them all the time,” she said. Follow Clover Café on Instagram for updates.
