Chef Josue Chanduvi has opened the first few phases of Campo, his multifaceted food destination at Zenbarn in Waterbury Center. Chanduvi, 34, leases the restaurant space at 179 Guptil Road. So far, he has renovated an office into a creemee window; launched an outdoor snack shack-style menu, which includes some Latin American fare; and started cooking dishes such as paella on a custom-built, 10-foot-long Argentinean grill called a parrilla. The spacious outdoor dining area is anchored by a long bar table welded to a fire truck.

By the end of the summer, Chanduvi said, he and his team of 13 will add breakfast, a bakery and indoor seating. Campo also does on- and off-site event catering. Zenbarn continues to run the bar and the venue’s entertainment schedule.

Chanduvi’s varied background includes owning two businesses in Plattsburgh, N.Y., where he was raised with the culinary influences of his Peruvian mother and Cuban father. He also owned Grandma’s Spanish Kitchen in Burlington, served as executive chef at the von Trapp Family Lodge & Resort in Stowe, and, most recently, was a district manager for Five Guys.

The chef-owner said his menus will feature as many local ingredients as he can source. The creemee window, for example, uses Vermont’s only organic base, from Miller Farm in Vernon, plus Runamok Maple syrup from Fairfax. Campo’s menu includes a Boyden Farm burger raised in Cambridge with a Peruvian verde sauce; barbecued pork ribs with rice and a cucumber-pepper salad; and empanadas filled with Cuban picadillo.

Chanduvi said he aims to provide “healthy, affordable, local” food that is accessible to “townies” and visitors. On Friday and Saturday nights, Campo offers $15-per-person barbecue packages, which might include barbecue chicken, potato salad, slaw and cornbread.

Campo is currently open Wednesday through Sunday, noon to 9 p.m.
