A trio of Waterbury locals plans to launch an all-day café, wine bar and ice cream counter in the former location of Stowe Street Café at 29 Stowe Street this summer.
Katya d’Angelo and Chris Triolo — owners of Bridgeside Books, also at 29 Stowe Street — have teamed up with restaurant pro Rachael Brown to run the Bidwell. They haven’t yet set an opening date, Brown said, and are busy transforming the 25-seat space “to make it feel like its very own thing.”
Brown, who had an extensive restaurant career in New York City before moving to Vermont, will be the Bidwell’s general manager. She helped open the Waterbury outpost of Stone’s Throw in 2023 and spent the past year working at Prohibition Pig.
Chef Tiffany Caldwell, who previously worked at Hen of the Wood and Gallus Handcrafted Pasta, will make seasonally rotating dishes for breakfast and lunch, including sandwiches with 5th Quarter meats and small plates such as beef carpaccio and tinned fish. The menu will be served all day, along with espresso drinks using beans from Vermont Artisan Coffee & Tea, beer, and wine.
“We all live right in Waterbury, and we’re trying to complement the existing restaurants and fill holes where things don’t exist, like coffee in the afternoon and a focused and fun wine program,” Brown said.
The Bidwell will also be a permanent home for the Udder Guys, an ice cream tricycle that’s been a staple at events around town since 2017. This spring, d’Angelo — the Udder Guys’ original owner — bought the biz back from Eli German, who is off to college after spending his teen years pedaling and peddling cones. German’s mother, Nicole Grenier, owned Stowe Street Café and continues to own the building.
The Udder Guys will have a counter of its own within the Bidwell, adding affogatos and toppings such as hot fudge and Oreos to its lineup of Adirondack Creamery flavors. The tricycle will still head out for special events. ➆
