- Restaurant will be in site of Foam art exhibit
Foam Brewers on the Burlington waterfront plans to open a restaurant in the Lake Street building that houses its brewery and taproom, according to co-owner Jon Farmer.
The new restaurant, which Farmer expects will open in late winter or early spring, has yet to be named. It will be a quick-service, farm-to-table restaurant whose concept and menu will be further developed when Foam hires a chef/kitchen manager to run the new business, Farmer told
Seven Days.
"We want to incorporate whoever the chef is into [designing] the brand and menu,” he said.
The restaurant will have about 60 indoor seats with an outdoor patio that will seat an additional 25 people, Farmer said. Though it will share a building with the brewery, the restaurant will have a separate entrance. Together, the restaurant and the brewery will offer “two different experiences” for patrons, Farmer said.
“Some people might want to come down and enjoy our beer and enjoy the music,” he said. Others might opt "to sit down at a table and have a meal."
The restaurant will be on the south side of the building, where offices were dismantled last year for an
art exhibit that Foam hosted in late March.
Foam Brewers opened in April 2016 in the space that previously housed San Sai Japanese Restaurant. It serves cheese plates and charcuterie in the taproom and patrons can get food from food trucks that park outside. The brewery has music on weekends and is the seasonal site of a weekly produce stand from
Three Chimney Farm.
