Caledonia Spirits — It’s unlikely that a tiny Vermont distillery, situated behind a log yard in Hardwick, would produce one of the world’s top-rated gins, right? Wrong. At Caledonia Spirits, that gin is based in honey — seemingly even more unlikely at a time when honeybees are perishing in unprecedented numbers. And, as the art of barrel making fades into history, the distillery has found a nearby artisan to coop its barrels using rare Vermont white oak. Caledonia Spirits accomplishes all of these unlikely things to craft bartender favorites such as Barr Hill gin and vodka, along with the sweet, amber-hued Tom Cat Reserve gin (and a forthcoming aged whiskey!). Tasting them is believing.
