Side Dishes: Waterbury lawyer opens one-of-a-kind pub

Ever wish your lawyer could also counsel you on fishing tackle and fine European libations? Vermont Law School grad Rick Binet does it all.

Having left jobs at large law offices, Binet recently went into business for himself. On February 12, he set up a unique new venture in Waterbury, Blackback Pub and Flyshop. Binet’s explanation for the unconventional combo? “I’m just kind of a crazy fly fisherman [and] I love sharing my favorite beers with people. There’s not a waiting room for legal clients or anything, but I’ll meet a customer there.”

Binet compares the bar aspect of his business to Montpelier’s Three Penny Taproom, and he claims to serve “the best beer in the world.” His studied selections include Weihenstephaner Weissbier, Dogfish Head 90 Minute IPA and Delirium Tremens. There’s also a growing wine list — Binet is particularly fond of Emilio Moro Resalso.

Binet is working on growing the food aspect of his business with fresh local produce. For now, guests can pair their ales with a cured salmon plate and imported cheeses such as Spanish Manchego. And if the sporting equipment gets you in the mood for a taste of the briny, Stebu Sushi is right next door.
